My Story

For many people, "gluten free" dining seems like the latest dieting bandwagon to jump on. But what some seem to be unaware of is that over three million people in the United States are forced to adhere to gluten free lifestyles due to Celicas disease, a condition not allowing people to ingest gluten.

My name is Caitlyn, and I happen to be one of the millions that has no choice in the matter. For years I struggled with stomach issues, often doubling over in pain after meals. I would go to the ER at odd hours of the morning and make countless trips to the doctor, describing the bouts of pain I often had while I was eating. I was told that it was stress, GERD, ulcers, and many other diagnoses before anyone even thought to test me for Celiacs disease. This past March, it finally occurred to my doctor to investigate the matter. SURPRISE! No more gluten for me.

At first, I considered this to truly be hell on earth. Because until you're forced to read labels, you never realize how many things have gluten in them- through wheat, barely, or rye- and let me just tell you, it's in everything it seems. At first. And then you learn where to look, how to cook, and you're well on your way to a gluten free lifestyle.

The upside to Celiacs disease is that its a simple fix- remove the gluten, and it's amazing how much better you feel.

I wanted to start this blog to share recipes, restaurants, stores, products- anything gluten free that might help others in their journey!

Bare with me in getting things started, but I hope to have lots of gluten free alternatives and substitutes to share with those wishing to pursue gluten free living ( by choice or not so much choice ;)) very soon!
